The Ninth Delicious & Easy Recipe With Kale

Ingredients:

200 g kale
1 dl red quinoa
1 red onion
1 dl of sun-dried tomatoes
2 apples
1 dl hazelnuts
1 dl mixed herbs
1 dl black olives

Dressing:

2 cups apple juice
1 tablespoon concentrated tomato puree
1 clove of garlic
juice of ½ lemon
½ dl extra virgin olive oil
Salt and freshly ground pepper

Instructions: 

Rib the kale and finely chop it. Boil the quinoa in lightly salted water for approx. 10-15 minutes. Finely chop the red onion and cut the sun-dried tomatoes into small pieces. Cut the apples into cubes. Shake the hazelnuts on a hot pan until they get color and remove the peel. Chop the herbs.

Heat a saucepan with 2 cups apple juice and simmer for 10-12 minutes until cooked to half. Cool the syrup down. Turn the tomato puree with the squeezed garlic, lemon juice, syrup, salt and pepper. Then stir in the olive oil. Turn all the vegetables and quinoa with the dressing and half of the hazelnuts and olives. Arrange the salad and garnish with olives, hazelnuts and herbs.
