2 onions, finely chopped
3 cloves of garlic, finely chopped
1 tablespoon olive oil
4 potatoes, peeled and cut into cubes
1 l vegetable broth
200 g kale, finely chopped
1 cup cream (oat-cream for vegan version)
Salt, freshly ground black pepper
Cook onions and garlic in the pan with oil for a few minutes at medium heat until the onions are clear and transparent.
Add potatoes in diced and then vegetable broth. Simmer under lid until the potatoes are tender.
Then add the kale and cook for another 3 minutes. Add cream and blend the soup until it is airy and creamy.
Season with salt and pepper.
